Essence Applied in Biscuit Production

Along with development and perfect of biscuit technology, natural and harmonious flavor brings vital force for biscuit product variability. Customer accepts some kind of biscuit product depending on biscuit flavor to some extent. Therefore, biscuit flavor is reasonable to be one of the key for affecting customers’ value direction. In baking food, biscuit is one the widest products that apply essence. Food essence can be divided into water soluble essence, water and oil soluble essence, oil soluble essence, and emulsified essence. Though essence accounts for a little proportion in biscuit ingredient, it plays an important role in whole product. How to choose essence for biscuit?

1. Choose harmonious flavor.

2. Choose essence which has good thermal stability. Mix essence with flour and other materials. It needs the essence which has good heat endurance, because the flour has to be baked under 220℃. Usually, we choose oil soluble essence during adjusting flour process when we add essence. For instance, HODIAS oil soluble fruit and milk essence belong to the essence which has high temperature endurance performance. In adjusting flour phase, it can be added with powder essence such as ethyl maltol, HODIAS HD-5 pure ethyl maltol.

3. Put proper essence dosage. Too much essence might cause stimulation and bitterness and damage natural essence flavor. It’s better to put 0.1%-0.2% in biscuit.

 

Biscuit product aroma generated in different environments and affected by many factors such as equipment performance, technology condition, assorted reasonability, raw material and assistant material quality. Temperature is the most obvious factor that affects aroma. So, if we choose proper essence, it will reduce the requirement on temperature. Firstly, increase essence after baking process. Spray oil with essence or solid essence powder on biscuit. This method avoids long time of baking, so it enlarges essence range.

Secondly, increase essence during filling phase. This method fits for wafer biscuit and filling biscuit. Common biscuit filling is sugar, oil grease, dairy product, fruit sauce, so mix essence and these raw materials together. Then fix this filling between wafer single pieces. This technique process is quiet simple. It’s no need of high temperature, so it needn’t any high requirement on essence breed.

In a word, when we increase essence for biscuit, we have to consider customers’ age and flavor feature. Master essence physical and chemical characteristics when we apply essence; control essence dosage strictly, neither too little nor too much of essence.
